Teriyaki Salmon Bowl

Teriyaki Salmon Bowl

 

Ingredients
  • 2 lbs salmon fillet cut into cubes
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 2 cloves garlic, minced or grated
  • 1 teaspoon ginger, grated
  • 2 tablespoons chili oil
  • 2 tablespoons Dark Soy Sauce
  • 1 tablespoons oyster sauce
  • 1 tablespoon cornstarch
  • 1/2 cup water
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1/2 cup chopped green onions garnish(optional)
Plating the bowl
  • 1.5 cup salmon
  • 2 cups cooked rice
  • 1 cup purple cabbage
  • 1/2 cup diced cucumber
  • 1/2 cup shredded carrot
  • 2 tablespoons green onions (optional)
  • 2 teaspoons sesame seeds (garnish)
Dressing
  • 1/4 cup kewpie mayo
  • 2 tablespoons sriracha
  • 1/2 lime juice or less
  • 1/2 teaspoon Chili oil
Instructions
  • In a bowl, combine soy sauce, brown sugar, dark soy sauce, chili oil, rice vinegar, garlic, and ginger, to make the teriyaki marinade.
  • Place cube salmon in the marinade and refrigerate for at least 1 hour, or overnight for best results.
  • Preheat your grill or skillet over medium heat.
  • Remove salmon from the marinade, reserving the marinade.
  • Cook salmon for 3-5 minutes per side or until cooked through.
  • While the salmon is cooking, add cornstarch to the reserved marinade. Remove salmon from pan and set aside.
  • Add reserved marinade to the saucepan. Stir until the sauce thickens then add the cooked salmon mix to incorporate all the flavors.
  • Remove and garnish with chopped green onions. (Optional)
