Skillet-Roasted Rooster with Lemon is a superb meal for any evening of the week!
For this recipe, rooster is pan fried till the pores and skin is golden brown and crisp. Then the shallots and garlic are added together with coconut flour to thicken issues up, and a few broth and lemon juice are stirred in. It’s all put in a sizzling oven to roast till the rooster is cooked via and it’s topped with parsley and thyme. It’s a unbelievable mixture and it makes for excellent leftovers!
You’ll want a big skillet that may go within the oven. A forged iron or stainless-steel 12″ skillet is an efficient selection.

For the Rooster:
3 kilos bone-in rooster items (breasts or thighs)
Celtic sea salt
For the sauce:
2 tablespoons ghee, divided (use lard or duck fats for dairy-free)
1 shallot, chopped
2 garlic cloves, chopped
1 teaspoon coconut flour
1 cup bone broth or meat inventory
1/2 teaspoon Celtic sea salt
1/4 lemon juice
Zest from 1 lemons
2 tablespoons recent parsley, chopped
1 teaspoon recent thyme, minced
Directions
Preheat oven to 475F and alter the rack tot he center place. Sprinkle every rooster thigh with sea salt. Place 1 tablespoon of the ghee in a 12” oven-proof skillet over medium excessive warmth, swirling the pan to coat. Place the rooster skin-side down within the skillet and prepare dinner till the pores and skin is browned and crisp, about 8 minutes. Flip the rooster items and proceed to prepare dinner till browned on the second aspect, about 5 minutes. Switch rooster to a plate.
