- 5-6 Bone in skin on chicken thighs
- 1 tablespoon Olive oil
- 1 teaspoon black pepper
- 1 tablespoon complete season
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 teaspoon smoked paprika
- 1 teaspoon ground ginger
- 1 tablespoon red pepper flakes
- 1 small yellow onion
- 1 large carrot dice
- 1 yellow bell pepper dice
- 1 red bell pepper dice
- 1 green bell pepper dice
- 2 Roma tomato dice
- 3 1/2 – 4 cups water
- 1 chopped Jalapeño
- 2 cup white rice
- 1 tablespoon unsalted butter (optional)
SAUCE FOR BRUSHING
- 2 tablespoon ketchup
- 1 tablespoon BBQ sauce
- 1 tablespoon water
INSTRUCTION
- Preheat oven to 400 degrees
