Mexican Dinner
Mexican Rice
Ingredients
- 2 Tablespoons unsalted butter
- 2 Cup Jasmine rice
- 1/4 Cup Dice Sweet onion
- 1 tablespoons Complete season
- Salt to taste
- 1 sprig of fresh thyme
- 3 1/2 cup water
- 2-3 Sprig cilantro
- 1/2 Jalapeño
- 1 cup tomato (freshly blended) or tomato paste
- 1 bay leaves
- 1/2 Teaspoons chili powder
Instructions
• In a sauce pot over a low flame add butter and onion and saute for 2-3 minutes until fragrant, add rice mix for 1-2 minutes, then add water, season with cilantro thyme, bay leaves, chili powder jalapeño and tomato paste.
• Mix, cover, and cook for 20-30 minutes or until all the liquids are absorbed into the rice fluff Serve and Enjoy!
Optional
When rice is cooked fluff with more butter.
Pork Chorizo Refried beans
Ingredients
- 1 cup pork chorizo
- 1/2 cup onion (dice)
- 1 teaspoon chili powder
- 1 tablespoon complete seasoning
- 15 oz. canned refry beans
- 1/2 cup taco blend cheese
- pepper to taste
- garnish with chop cilantro
Instructions
- In a medium saucepan on medium to low heat add oil toss in your dice onions cook until fragrant, this takes around 5 minutes.
- Now add your pork chorizo with chili powder and complete seasoning. Cook for 5-8 minutes.
- Add your can refried beans in stir and covered for 5 minutes on medium-low heat. Stir occasionally.
- Once done remove beans from the heat, and add cheese with chopped cilantro.
Shrimp Tacos
Ingredients
- 1 lb shrimp peeled and deveined
- 4-6 warm and tortillas
- 1 Teaspoon complete season
- 1 Tablespoon taco seasoning
- 1 Teaspoon onion powder
- Garlic powder
- Lime wedges to serve
Vegetables Slaw
- 1 Cup shredded purple cabbage
- 1 Teaspoon Apple cider vinegar
- 1 Cup shredded green cabbage
- 1 Teaspoon white sugar
- 1 Tablespoons mayo – optional
Instructions
- In a large bowl, add shrimp, and powder seasoning and toss the shrimp to coat.
- In a saucepan over medium heat add oil to the pan and cook shrimp on both sides for 2-3 minutes.
- Add vegetable slaw to warm tortillas then add shrimp and top with dressing. Serve immediately with Mexican rice and refried beans with lime wedges!
