Jerk Chicken And Festival

 

 

 Festival Ingredients
  • 2 ½ cups all-purpose flour
  • 2/3 cup fine cornmeal
  • 1/4 cup granulated sugar
  • 2 1/2 Teaspoons baking powder
  • 1 Teaspoon salt
  • 1 Teaspoon vanilla extract
  • ¾ Cup milk or water add more as needed
  • Vegetable oil for frying
  • 1-2 Dice jalapeños
  • 1 Cup smoked gouda
Jerk Chicken Ingredients
  • 5 Pounds leg quarters
  • 4-5 Tablespoon jerk seasoning
  • 2 Tablespoons complete seasoning
  • 1/2 Teaspoon smoked paprika
  • 1 Tablespoon garlic powder
  • 1 Tablespoon onion powder
  • Hot sauce (optional)
Sauce for brushing
  • 2 Tablespoon Jerk Marinade
  • 1 Tablespoon BBQ sauce
  • 1 -2 Tablespoon ketchup
Festival Instructions:

1. In a large mixing bowl, combine the flour, cornmeal, sugar, salt, baking powder, cheese, and jalapeño.

2. In a separate bowl, mix the water or milk, and vanilla extract.

3. Gradually add the wet ingredients to the dry ingredients, stirring to form a soft dough. You may need to adjust the water slightly to get the right consistency.

4. Divide the dough into small portions and roll them into elongated shapes, resembling fingers.

5. Heat about 2 inches of vegetable oil in a deep skillet or pot to 350°F (175°C).

6. Carefully slide the festival fingers into the hot oil. Fry until they are golden brown and crispy, turning occasionally, about 5-7 minutes.

7. Remove the festivals and drain them on paper towels or a cooling rack.

8. Serve your Jamaican festivals warm with your favorite entree.

Jerk Chicken Instructions:

1. Wash clean and season your chicken

2. Let chicken marinate in the refrigerator for 4-24 hours.

3. To install the grill grate, position it flat on top of the heating element and gently press down until it sits in place, then close the hood.

4. Turn the dial to select GRILL, set the temperature to MED, and set the time to 45 minutes. Select START/STOP to begin preheating.

5. When the unit beeps to signify it has preheated and ADD FOOD is displayed, open the hood and the chicken to grill ensuring they are spread out to maximize grill marks.

6. Leave the hood open and grill for 45 minutes flip every 5 minutes. Using silicone-tipped tongs, flip the chicken.

7. After 45 minutes turn the grill on LOW close the hood and grill for 10 minutes flip every 5 minutes. And brush with reserved jerk sauce.

8. When cooking is complete, open the hood, remove the chicken, and Serve with your favorite sides.
