Barbecue (Barbie) Fry Chicken
Chicken Ingredients
- 3 Pounds Chicken Thighs and drumsticks – bone in
- 3 Tablespoons hot sauce
- 3 Tablespoon mustard
- 1 Teaspoon black Pepper
- 1 Tablespoon garlic powder
- 1 Tablespoon onion powder
- 1 1/2 Tablespoon complete seasoning
- 1 Tablespoon table blend seasoning
- 1 Teaspoon garlic and herb seasoning
- 1/2 Teaspoon smoked paprika
- Oil for frying
- Salt to taste
Breaded Ingredients
- 2 Cup all-purpose flour
- 1/2 Cup cornstarch
- 2 Tablespoon baking powder
- 1 Tablespoon complete seasoning
- 1 Tablespoon table blend seasoning
- 1/2 Teaspoon smoked paprika
- 1/2 Teaspoon black pepper
- Salt to taste
Barbecue Sauce
- 1 Cup barbecue sauce
- 1/2 Cup ketchup
- 1/2 Cup honey
- 1/3 Cup water
- 2 Tablespoon brown sugar
- 2 Teaspoon hot pepper sauce
Instructions
- Wash clean and season the chicken with the above mentioned ingredients and let the chicken marinate for 4-24 hours.
- In a skillet pan, heavy bottom pot, or deep fryer heat oil to 350 degrees Fahrenheit. While the oil is heating, place a wire rack on top of a baking sheet with some foil or paper towel on the baking sheet below to catch the drippings.
- In a large bowl or shallow dish, prepare the flour mixture by combining all the breading ingredients in a medium bowl.
- Remove the chicken one piece at a time from the seasoning. Coat chicken thoroughly with flour mixture, and place breaded chicken onto a plate.
- Fry in batches, place a few pieces of the chicken into the oil at a time, frying for 10-12 minutes. Remove the chicken and place it onto a wire rack. Let the chicken rest for a few moments.
- While the chicken is frying, preheat the oven to 400 degrees and prepare the barbecue sauce. In a saucepan, combine all the sauce ingredients and simmer over low heat for about 5-7 minutes, stirring occasionally, until the sauce thickens. Remove from heat and dip chicken into the sauce to coat evenly.
7. Place the coated chicken on the wire rack and bake for 5-10 minutes remove from the oven and let the chicken sit for another 1-2 minutes before serving. Enjoy the bold and spicy flavors of Jamaican barbecue fried chicken!
