Sweet, nutty and full of flavor, these quick and easy Baked Oatmeal Cups is a family friendly recipe. They are perfect for a quick and easy breakfast and snack on the go. Although this recipe can be modify to topped with your favorite nuts, berries or chocolate I would suggest to go light.

Meal prep breakfast have never been so easy for you and your family. This quick and easy Baked Oatmeal Cups are hearty delicious breakfast bite. Yes! it can be made ahead of time and store in a freeze bag or air tight container in refrigerator and reheat whenever you are ready for your delicious bite. Remember it’s also a great snack! Please note once you try this recipe it will be impossible for you not to be addict.

What ingredients you will need?

Ripe Banana – Mashed banana, I use the ripest banana for that natural sweetness and flavor
Peanut Butter Powder – I like to use peanut butter powder because it’s low in calories. However regular peanut butter works too.
Honey – I use honey for additional natural sweetener.Protein Powder (Optional) – is supplements to help build and repair muscles. I only use protein because I like to ensure all my meals have adequate nutritional supplements.
Unsweetened Almond Milk – Any milk can be use I just prefer plant base
Oats –
Is the main ingredients for this recipe it cannot be substitute Cinnamon/ Vanilla Extract – Extract Flavor and spice.
Nutmeg – Use for extra flavor in baking. the flavor is nutty, and slightly sweet perfect for dessert and savory cooking.
Almond extract – Smell sweet and nutty this will add additional flavor
Baking Powder – is use to increase volume and lighten the texture of of this recipe
Nuts – Pecan and almond slice

Optional mix-ins or toppings:

  • Walnut
  • Berries
How do you make these easy bake banana nut oatmeal cups?

Step 1 – In a large baking dish add oats, protein powder, peanut butter powder, baking powder, chopped pecan, slice almond mix and set aside.
Step 2 – In a medium baking dish mashed banana, add honey, vanilla, mix well to combine.
Step 3 – Pour liquid mixture into dry ingredients mix with a spatula to properly combine.
Step 4 – Pour 1/4 cup into lined muffin pan topped with pecan.
Step 5 – Bake at 325F for 30-35 minutes allow to cool and serve and enjoyed.

Ingredients

• 2 1/2 Cup rolled oats
• 3 Banana mashed
• 1 1/4 Cup almond milk
• 1/4 Cup honey
• 1/2 Cup Slice almond
• 1/2 Cup chopped pecan
• 2 Teaspoon baking powder
• 1 Teaspoon Cinnamon
• 1 Teaspoon Nutmeg
• 1 Teaspoon Vanilla
• 1 Teaspoon Almond extract
• 1 Scoop Vanilla Protein powder (optional)
• 1 Tbsp Peanut butter powder

Optional: toppings

• Drizzle Melted Peanut Butter

Instructions

In a large baking dish add oats, protein powder, peanut butter powder, baking powder, chopped pecan, slice almond mix and set aside.
In a medium baking dish mashed banana, add honey, vanilla, mix well to combine.
Pour liquid mixture into dry ingredients mix with a spatula to properly combine .
Pour 1/4 cup into lined muffin pan topped with pecan.
Bake at 325F for 30-35 minutes
Allow to cool and serve and enjoyed.
