The Recipe:
Smoked Orange Pepper Chicken
Ingredients
• 4 bone-in, skin-on chicken thighs
• 1 Teaspoon white pepper
• 1 Teaspoon black pepper
• 1 Tablespoon of complete seasoning
• Salt to taste
• 1 Tablespoon garlic powder
• 1 Tablespoon onion powder
Orange Pepper Sauce
• 1 Tablespoon unsalted butter
• 1 Tablespoon honey
• Dash of orange zest
• 1 Tablespoon orange pepper seasoning
• Juice of one orange, freshly squeezed
Instruction
• Wash clean and season your chicken to your liking then let the chicken marinate in the refrigerator for 4-24 hours.
• To make chicken install the grill grate, position it flat on top of the heating element, and gently press down until it sits in place, then close the hood. Turn the dial to select GRILL, set the temperature to MED, and set the time to 10 minutes. Select START/STOP to begin preheating.
• When the unit beeps to signify it has preheated and ADD FOOD is displayed, open the hood and the chicken thighs to the grill ensuring they are spread out to maximize grill marks. Leave the hood open and grill for 20 minutes flip every 5 minutes. Using silicone-tipped tongs, flip the chicken.
• After 20 minutes use the pellet scoop to pour pellets into the smoke box until filled to the top. Then close the smoke box lid.
• Turn the dial to select SMOKE then smoke for 30 minutes covered. While the chicken is smoking make orange pepper sauce on low heat using a medium saucepan add butter, honey, orange juice, orange pepper seasoning, and orange zest mix for 1-2 minutes until bubbly. Removed and set aside.
• When cooking is complete, open the hood, remove the chicken thighs, and tossed in your orange pepper sauce to ensure is well coated. Serve with your favorite sides.
